Simple Fish Marinade, Three Ways

Here are three simple fish marinades that are perfect for fish fillets or steaks before they hit the BBQ, or go into the pan or oven. Each marinade makes enough for two medium fish steaks or at least two large fillets. If you’re feeding a crowd, you’ll need to double or triple the marinade recipe you’re using. Serve with rice and greens on the side for a quick mid-week dinner.
Use: Fish Steaks (like Moki, Warehou, Kingfish or Hapuka) or Fish Fillets (like Moki, Warehou, Gurnard, Tarakihi or Blue Cod).
Ingredients

 Asian-Style

  • 3 Tbsp Soy Sauce
  • 1 x Tbsp Sesame Oil
  • 1 Tbsp Honey
  • 5cm Ginger, peeled & grated
  • 1 Tbsp Spring Onions or Chives, freshly chopped

or, Mediterranean-Style

  • 1 clove Garlic, finely chopped
  • 1 Tbsp Dill, chopped
  • 1/2 cup Olive Oil
  • 1 Tbsp fresh Oregano, chopped
  • 2 Tbsp Capers, chopped
  • Freshly Cracked Black Pepper

or, Island-Style

  • 1 small red Chili, chopped and deseeded
  • 1 fresh Lime, zest and juice
  • 1.5 Tbsp Fish Sauce
  • 2 tsp Sugar
  • Freshly Cracked Black Pepper
Method
  • Combine all the ingredients for the marinade together and set aside.
  • If needed, rinse fish steaks or fillets under cold running water to wash off any scales. Using a clean tea towel or paper towel, pat dry.
  • In a bowl, brush or pour the marinade over the fish on both sides. Make sure the fish is well covered in marinade and set aside in the fridge for 30 minutes to two hours.
  • Pre heat your BBQ plate or a saucepan on the stove to a medium heat
  • Oil the grill lightly if you’re doing the island-style marinade.
  • Cook your fish, turning when you’re about halfway through. Cooking time is going to depend on the thickness of your steaks or fillets.
  • Season fish to taste with flakey sea salt after cooking.
