EATING
Gurnard is a medium-firm feshed fish that holds together well in most cooking applications. Very fresh Gurnard makes great ceviche or sashimi. All our whole fish is delivered gutted, and sold as individual fish. If you’re cooking Gurnard whole, make sure you cook it belly down. Remember that fresh fish frames make the best fish stock, and there’s a great method in the recipes section here on our website.

STORING
Keep whole fish in an airtight container or wrapped in plastic wrap in the coldest part of your fridge. Whole fish will keep for a couple of days in the fridge, but they won’t keep as long as fillets will. The eyes and skin of your whole fish dulling is a sign they are ageing.

Queenstown and Arrowtown (including Jack’s Point) delivery $6, Tue – Fri.
