Tītī (Muttonbird) Salted

EATING
Our Tītī are salted and brined in buckets, and sold individually. Tītī are a bird harvested annually by Rakiura Māori, between April and May. They have a bird-like flesh, and a salty ocean taste reminiscent of fish. We recommend washing the bird, and then bringing it to a slow boil in cold water. This will bring the salt content of the bird down. This process may need to be repeated multiple times depending on how long the bird has been brined. Taste the water of the boiled bird to decide. Once boiled, roast in the oven at a high heat until the skin begins to crisp.

STORING
If you receive Tītī from us vacuum-packed, it's perfectly fine to be popped into the fridge in the sealed bag, but a better option would be to unpack it into an airtight container. Store in the fridge and consume within 7 days. Our buckets of Tītī can be stored unopened in a cool dark place until ready to consume. Once opened please refrigerate in the bucket.

AVERAGE WEIGHT
400 - 600g each, but weight will vary.
