Year-round, as Te Kouma Bay Oysters are a triploid Pacific oyster variety.

Te Kouma Bay Oysters are a Pacific Rock Oyster. Our oysters are sold live, by the dozen. Te Kouma Bay oysters have a crisp, salty, ocean-fresh flavour, and a creamy finish. The oysters are plump and juicy, with plenty of liquid in the shell. We recommend eating them fresh-shucked from the shell with a mignonette (made with chardonnay vinegar and shallots). Shucking pacific oysters at home is reasonably straight forward and there are lots of good instructional videos available online. Don’t consume any oysters that have open shells and don’t need shucking.

Live oysters will keep for up to 5 days in a domestic fridge with a damp tea towel or cloth covering them. Most shellfish can be kept for at least a couple of days in this manner in the fridge, but oysters are particularly hardy and will hold the longest of all live shellfish.
