EATING
Moki has a firm flesh, and the fillets are thick and meaty with large flakes. It's sturdy and holds up well in most cooking methods. Our frozen Moki is skinless and boneless, layer-pack and blast-frozen in a 5kg box.

STORING
Store our frozen Moki in the freezer until you're ready to use it. It's best defrosted in the fridge. If you're short on time, pop fillets into a sealed bag and submerge in water that's a bit cooler than room temperature. Change the water every 20-30 minutes and weight the fish down so it's fully submerged in the water (not bobbing about).
